Chili Recipe Adventures
chili recipe I recently prepared the rich corn nachos that you like so much, and on that occasion I accompanied them with guacamole, but another way to eat them is with Chili, a Mexican stew made with chilies, meat and beans. Personally I really like spicy, so I really enjoy this tasty dish, ideal for a fun starter, or to nibble on while watching our favorite TV series.
If I want it to be a more complete dish, for lunch, I usually serve it accompanied by boiled rice, which surely is not the most orthodox but they complement each other well. This chili can also be used to fill corn pancakes, accompanied by vegetables or other ingredients, in the Mexican way.

2 tablespoons of olive oil, 1 large onion, 3 cloves of garlic, 1 teaspoon of ground chilies (or two dried chillies), 500 gr. minced beef, 2 tablespoons of ground cumin, 400 gr. canned tomatoes, 1 tablespoon of tomato concentrate, 400 cc. meat broth, 2 teaspoons of dried oregano, 1 teaspoon of thyme, 1 tablespoon of sugar, 400 gr. packaged red beans.
Heat the olive oil in a heavy-bottomed pot. Sauté the finely chopped onion about 5 minutes, or until transparent, stirring non-stop. Add the minced garlic, chillies and minced meat. Keep stir-frying, stirring, until meat begins to brown.
Pour in the broth, drained tomatoes, cumin, tomato concentrate, herbs, and sugar, and simmer for an hour, stirring so that the meat does not form lumps.
Add the red beans, drained, and cook another 15 minutes, or until the stew is thick. Serve hot, decorated with a little fresh parsley or coriander. If you like cheese you can add a little melting cheese when serving. It is usually accompanied by nachos or tortillas, but it also works well with cooked rice.
